Organic maneuvers it is a traditional Greek cheese originating from ancient times. It belongs to the category of soft whey cheeses, and is prepared mainly in Central and Western Macedonia, Thessaly and Crete. It has a sweet and mild aroma, and the National Committee for Greek Milk has characterized it as "the most excellent traditional Greek whey cheese".

Traditional organic manouri Vasilitsa it is prepared on the basis of organic goat's and sheep's milk with the addition of fresh whole organic goat's and sheep's milk or organic goat's and sheep's milk cream. Since 1996, its production technique has been certified and manouri has been registered as a certified designation of origin (PDO) product with published specifications 313028 / 11-01-1994 (Government Gazette 8 / 11-01-94).
